The list of Salesforce variables you could use is extensive, as any synced Salesforce fields can be used as variables in Mixmax.
If you manage your own Mixmax account settings, you can view the list of fields in the CRMs and Live Feed Settings. If you do not manage your Mixmax account settings and you are not a Workspace Admin, you will not be able to view the list of fields in that section of your personal settings. If you are a Workspace Admin, you can view the list of fields in Admin Settings.
Please be advised that adding or removing fields from the list does not add or remove them from the variable pickers in sequences, templates, and rules. The available fields in the variable picker are pulled from the Sync User's profile. Any fields that the Sync User has access to in Salesforce will be visible in the variable picker.

Yes — all these activities are logged to Salesforce and associated with the appropriate Contact, Lead, Account, and Opportunity record. The Mixmax Insights package helps facilitate this reporting with pre-built dashboards.
